Artichoke is one of our favorite vegetables and we love it in almost every form! Whether steamed with a lemon butter to dip the leaves in, grilled with garlic and herbs, made into a dip, or diced and added to the filling of a stuffed pasta… we will take it all! Because of this love for artichokes, we decided that we really needed to create a delicious filling incorporating artichokes for a pasta filling, and he hit the mark with this one! This Artichoke, Lemon and Burrata Ravioli with a Lemon Beurre Blanc is the perfect bright and fresh Summer stuffed pasta!
