We did it! We finally figured out how to make this low carb alternative to one of our favorite dishes – cheese risotto! To help maintain balance in our lives, we will often incorporate low carb (or keto) options into our weekday meals. We have done bouts of keto, and have found some fabulous low carb options that have now been added to our list of faves, just because they can be just as, if not tastier than that high-carb alternatives. And who doesn’t need a few more veggies in their lives?!
