    If I had the choice of waffles or pancakes, I would choose waffles 9 out of 10 times! Especially when it's a dessert disguised as a breakfast dish like these Passion Fruit and Peach Waffles!

    What's in this recipe?

    We are still hooked on all the amazing passion fruit products from Da Vine Foods, so we teamed up with them again for another winner of a recipe!

    In this recipe we are showcasing the Lilikoi Coconut Syrup! This syrup is such a treat to the palette with that incredibly satisfying sweet and tart passion fruit flavor combined with coconut! It's perfect to drizzle on pancakes, waffles, french toast, as well as most desserts!

    So we decided to combine the best of both and create a dessert waffle: Passion Fruit and Peach Waffles layered with Mascarpone Whipped Cream and topped with Peach Gelato or Ice Cream and Toasted Coconut! This is the waffle recipe you have been dreaming of all year, and it's time to splurge on this incredibly delicious dish!

    What is Passion Fruit, or Lilikoi?

    Passion fruit, or Lilikoi (its Hawaiian name pronounced like the lily flower and Koi like the fish), is a sweet and tart fruit found in tropical regions of the world. When cutting into these round, often yellow-skinned fruit, you will discover a pulp that contains small soft gel-like sacks surrounding black seeds, which are all edible! There is a thin white layer inside the smooth and fairly tough skin, which aren't eaten due to their bitter taste and tough texture. But you can dig into the pulp with a spoon for a delightful treat. Or squeeze and strain the juices to add to a variety of recipes.

    Passion Fruit Waffles

    The waffles in this recipe are made with passion fruit puree as well. We highly recommend picking up a bottle of Passion Fruit Puree along with the Lilikoi Coconut Syrup to make these waffles extra tropical. But if you like your waffle toppings to shine, then the syrup will give you that nice passion fruit flavor along with some coconut.

    Let's be honest, waffles are all about the toppings! And this is where we take these waffles from zero to hero. Of course syrup is a must, which is why we love this Lilikoi Coconut Syrup so much on these! To compliment the passion fruit, we prefer fresh sliced peaches. This is especially wonderful at the height of summer when passion fruit and peaches are in season!

    Now, of course we need whipped cream for these epic waffles, and homemade is always better! We enjoy having these with homemade lemon mascarpone whipped cream. If you haven't made mascarpone whipped cream before, don't fret! It is actually super easy to make with just a hand mixer. Mascarpone is essentially the Italian version of cream cheese, but it has a lot less of that typical cream cheese taste. It turns a regular old whipped cream into something a bit more substantial with more depth. And the citrus from the lemon flavoring pairs so well with the fresh peaches and passion fruit.

    Ingredients

    • Lemon Mascarpone Whipped Cream
    • 1 cup 1 heavy cream

    • ½ teaspoon lemon extract

    • ¾ cup mascarpone

    • 2 tablespoon 2 confectioners sugar

    • Waffles
    • 2 cups 2 all purpose flour

    • 2 teaspoon 2 baking powder

    • ¼ teaspoon baking soda

    • ½ cup granulated sugar

    • 1 cup 1 milk

    • ½ cup Passion Fruit Puree (we use Da Vine Foods)

    • 2 large 2 eggs

    • 1 teaspoon 1 vanilla extract

    • ½ stick unsalted butter melted (4 TBSP)

    • Toppings
    • Lilikoi (Passion Fruit) Coconut Syrup (we use Da Vine Foods)

    • Fresh sliced peaches

    • Toasted Coconut

    • Peach Gelato/Ice Cream

    Directions

    • PREPARE YOUR TOPPINGS
    • Pour syrup in a small sauce pan to warm on low - do not boil. Alternatively place in a microwave safe container and heat for 30s immediately before serving.
    • Slice fresh peaches and set aside.
    • In a small pan, add sweetened coconut flakes over medium heat. Allow to brown slightly, then remove from heat and set aside.
    • PREPARE THE WHIPPED CREAM
    • In a mixing bowl, beat heavy cream until stiff peaks form.
    • Add mascarpone, confectioners sugar, and lemon.
    • Mix on low until just combined. Be careful to not over beat the cream or it will begin to separate.
    • Set aside in fridge until waffles are ready.
    • MAKE THE WAFFLES
    • Combine dry ingredients in a large bowl (flour, baking powder, baking soda, and sugar.
    • Add milk, eggs and vanilla extract to dry ingredients. Stir until fully combined.
    • Add the melted butter and stir to combine. The batter should be fairly thick but still pourable.
    • Heat your waffle iron. Once ready, spray waffle iron with nonstick cooking spray or brush waffle iron with butter/oil.
    • Add about ½ cup of the batter to the center of the waffle iron - do not pour all the way to the sides - once you close the waffle iron, the batter will spread. Cook for a couple minutes until the waffle is golden brown and fairly firm. Remove to a wired cooling rack while you make the remaining waffles.
    • ASSEMBLE THE WAFFLES
    • Assemble the waffles to your preference. We like to stack them with whipped cream and peaches between the layers and top with peach gelato/ice cream then drizzle the Lilikoi Coconut Syrup over the top. But these can easily be served Waffle Bar Style with all the toppings available and each person creates their own! Enjoy!
