– 1 Tbsp olive oil – 2 yellow summer squash – 2 zucchini – 1 red bell pepper – 1 pound dried ziti pasta – 25 grape tomatoes – 4 tsp kosher salt – 4 cups sugo di pomodoro (or your fave tomato sauce) – 4 oz picCante provolone – 4 oz fontina – 8 oz mozzarella – ⅔ cup Parmesan cheese
If you are making this dish in advance to freeze, use an extra ½ cup of sauce with the ziti to prevent the entire dish from getting too dry.
