To make the blueberry pie simple syrup, add granulated sugar, water, blueberries, and vanilla to a pot and bring to a boil. Once boiling, reduce heat and simmer for 20 minutes or until the blueberries are completely broken down. Strain and allow to cool completely before using. Store in an airtight container in the fridge for up to 2 months.
Gimlet
Add gin, lime juice, and blueberry simple syrup to a glass with ice, stir and strain into a coupe glass. Garnish with fresh blueberries.
