Ingredients
  

Blueberry Pie Simple Syrup

  • 1.5 cups granulated sugar
  • 1 cup water
  • 1 pint blueberries
  • 1 teaspoon vanilla extract, or ½ vanilla bean, scraped

Gimlet

  • 2 oz Empress 1908 Gin
  • ¾ oz lime juice
  • 1 oz Blueberry Pie Simple Syrup
  • Blueberries for garnish

Instructions
 

Blueberry Pie Simple Syrup

  • To make the blueberry pie simple syrup, add granulated sugar, water, blueberries, and vanilla to a pot and bring to a boil. Once boiling, reduce heat and simmer for 20 minutes or until the blueberries are completely broken down. Strain and allow to cool completely before using. Store in an airtight container in the fridge for up to 2 months.

Gimlet

  • Add gin, lime juice, and blueberry simple syrup to a glass with ice, stir and strain into a coupe glass. Garnish with fresh blueberries.
