Ingredients
  

For the Pork

  • 6 lb pork shoulder
  • 2 tablespoon kosher salt – Divided
  • 1 teaspoon black pepper
  • 1 tablespoon vegetable oil
  • ½ cup dark beer, such as a Bock or Brown Ale
  • ½ cup beef, vegetable, or chicken stock
  • 2 tablespoon stone ground mustard
  • 2 tablespoon ancho chile powder
  • 1 tablespoon smoked paprika
  • 1 tablespoon Worcestershire Sauce
  • 1 tablespoon red wine vinegar
  • 2 tablespoon light or dark brown sugar
  • 1 tablespoon garlic powder
  • 1 teaspoon allspice
  • 2 teaspoon cinnamon
  • 1 small onion, diced small

Quick Pickled Red Onion

  • 1 medium red onion
  • 1 ¾ cups ice water
  • ¼ cup white wine vinegar
  • 1 teaspoon kosher salt
  • 1 tablespoon sugar

For Assembly

  • Sweet Hawaiian slider buns
  • Pickles
  • Honey Mustard or other sauce of choice

Instructions
 

Prepare the Pork

  • Trim the pork of excess fat. Rub the pork with the salt and pepper. In a slow cooker crock pot, add the oil, then add the pork. Whisk together the remaining ingredients in a separate bowl, then pour the mixture over the pork and cook on low for 10 hours.
  • Once done, remove the pork from the slow cooker and add the remaining salt to the juices and stir to combine thoroughly. Place the pork on a large cutting board and use two forks to pull the pork apart. Return the pulled pork to the juices in the slow cooker while you prepare the buns.

Prepare the Onions

  • At least 30 minutes before the pork is ready, slice the red onion thinly. In a large bowl, whisk the ice water, vinegar, salt, and sugar until the salt and sugar have dissolved. Add the onions and let the mixture sit for at least 30 minutes and up to three hours. Add ice to the bowl as needed to keep the liquid very cold.

Serve

  • Put some pulled pork on the buns and top pulled pork with the red onion slices, honey mustard, BBQ sauce, pickles, hot sauce and/or any other condiments you want. For the buns, you can serve them as is, or butter and toast them.
