Ingredients
  

  • 1 cup diced pineapple
  • 4 oz pineapple juice
  • 4 oz cream of coconut
  • 8 oz dark rum
  • Juice of 1 lime
  • 2 oz coconut liqueur
  • 1 oz Yellow Chartreuse (optional)
  • Pinch of kosher salt
  • Ice to thicken (3 cups or more)
  • Simple syrup or sugar (optional depending on the sweetness of your pineapple)

Instructions
 

  • Add all ingredients to a blend, and blend until smooth. Taste and optionally add simple syrup or sugar if you would like it to be sweeter (this depends greatly on the sweetness of your fresh pineapple). Serve with a dark rum floater (½ oz pour of rum on top of the drink), and garnish with a sprinkle with toasted coconut and pineapple wedge.
