For the Spiced Cider:
Add the cider, star anise, cinnamon stick, allspice, and cloves to a saucepan. Bring to a light boil, remove from the heat and let cool for 15-20 minutes. Strain out the solids and let cool completely. Store the spiced cider in a covered container in the refrigerator until ready to use.
For the Mule:
Add the vodka, cider, and lime juice to a mule mug filled with ice and stir. Top with ginger beer and stir lightly. Garnish with apple slices and a cinnamon stick if desired.
