Halve your honeydew melon. Use a melon baller to make balls of honeydew and set aside.

Prepare the Other Ingredients and Skewer
Slice the figs in half and cut each piece of prosciutto in half or thirds depending on how large your slices are.
8 slices of prosciutto, 8 figs
Assemble the skewers by skewering the prosciutto, followed by the fresh mint leaf, then the fig half, and finally the melon ball on each skewer.
Finish and Serve
Lay the skewers on your serving plate. Drizzle with a small amount of honey and they are ready to serve with an extra side of honey.

Substitutions:
Figs: Dried figs could work here, although fresh figs are recommended.
Honeydew: We think this has the perfect amount of sweetness and a great flavor, but other melons work as well. Cantaloupe is an especially good substitute here and is commonly served with prosciutto.
Prosciutto: Serrano ham, Iberico ham or any of the various cured hams made around the world will be a good substitute for prosciutto.
