Cooking with Wine is more than the name of our blog. We not only cook with wine in our recipes here, but we absolutely love discovering the best wines to pair with our recipes for sipping! And this month we are highlighting a very special recipe from our new cookbook, Mangiamo: Ricotta and Spinach Cannelloni with Grandma's Sunday Sauce.
This recipe is a full-on flavor bomb with layers of flavors coming from the homemade meat sauce, cheesy ricotta and spinach filling, and additional mozzarella and Parmesan on top! So this dish needs a beautiful full-bodied wine to hold its own. So for this month's featured Food and Wine Pairing with this Cannelloni recipe, we are showcasing the 2019 Paso Robles Cabernet Sauvignon from Broadside.
About the Wine
This 2019 Broadside Paso Robles Cabernet Sauvignon is a beautiful wine that is big on flavors. With plum, black olive, and dark chocolate notes. This wine has the fruit, tannins, and a perfect amount of acidity. Another thing we love about this wine is that it is 82% cabernet sauvignon, 12% merlot, and 6% malbec. We really appreciate the complexity and subtleness of the merlot and malbec in this wine.
A spicy meat sauce is a perfect pair for new-world cabernet sauvignons like this one from Broadside. A big wine is a must for a big dish like our Cannelloni, and we love this cab from one of our favorite wine regions, Paso Robles, along the Central Coast of California.
Ricotta and Spinach Cannelloni with Grandma's Sunday Sauce
This is sort of a "two-for-one" since Grandma's Sunday Sauce is also in our cookbook! It is so packed with flavor, but we didn't stop there when making these cannelloni! We added some beef and onions to the sauce to add richness.
The Cannelloni are really easy to make and taste amazing! If you like lasagna, try these for a different ratio of cheese filling and a completely different mouthfeel. There is a good spicy component to the filling since we love our red pepper flakes! We enjoy making them but the highlight is when they hit the table! The creamy ricotta with basil and spinach on the inside and mozzarella on top are amazing, but the real Parmesan, Parmigiano Reggiano, is always a star!
