This is the perfect seasonal sip for Thanksgiving and Holiday gatherings!
How to make the Spiced Pomegranate and Rosemary Simple Syrup?
There are only a few components in this cocktail, but they all come together in a brilliant way for a delicious seasonal sip!
The main ingredient giving this drink the season vibes is the Spiced Pomegranate and Rosemary Simple Syrup. You can make this in advance and keep it in your fridge for up to one month. We love adding this simple syrup to a variety of cocktails, so having it on hand is always a good idea.
The simple syrup is made with pomegranate juice, cinnamon sticks, star anise, sugar, water and a rosemary sprig. The infusion of all the flavors becomes a spectacular syrup, and once strained and cooled, you can use it in your cocktail!
Why use acid phosphate instead of lemon juice?
In this cocktail, you will see that we added 3 dashes of acid phosphate, instead of something with similar acidity - like lemon juice. This is for a good reason! Acid phosphate has the acidic properties of lemon juice to give the drink a touch of a tang, without that overall flavor profile of lemon juice. You can find acid phosphate to add to your bar collection HERE.
But, not to worry! If you can't find any, simply add a teaspoon or so of fresh lemon juice. Just know that this will make the color more purple and it will add a bit more lemon flavor to the cocktail, of course.

We created this cocktail with Empress 1908 gin, a Canadian hand-crafted spirit from Victoria Distillers in British Columbia. Spiced Pomegranate and Rosemary Gin Spritz
Ingredients
Spiced Pomegranate and Rosemary Simple Syrup
- 4 oz pomegranate juice
- 1 cup water
- 1.5 cups sugar
- 2 cinnamon sticks
- 1 star anise
- 1 sprig rosemary
Spiced Pomegranate and Rosemary Gin Spritz
- 2 oz Empress 1908 gin
- 1 oz Spiced Pomegranate and Rosemary Simple Syrup
- 3 dashes acid phosphate (or 3 drops of lemon juice* see note)
- ¾ oz tonic water
- 1 sprig rosemary for garnish
Instructions
Spiced Pomegranate and Rosemary Simple Syrup
- To make the simple syrup, add all ingredients to a saucepan and stir to combine. Over medium high heat, bring the mixture to a boil. Let boil for about 30 seconds, then remove from the heat. Let the syrup cool for about 10 minutes. The sugar will be completely dissolved and you will have a thin syrup consistency. Strain out the solids and allow to cool completely. Store in the refrigerator and use for up to 2 months.
Spiced Pomegranate and Rosemary Gin Spritz
- Add Empress, simple syrup, and acid phosphate to a tall mixing glass with ice. Mix for 30 seconds or until chilled. Add the tonic water and mix for 5 more seconds, then pour into a glass over ice. Garnish with a sprig of rosemary.
