Summertime brings heat and the absolute necessity for beach or pool cocktails! This 6-ingredient frozen delight is very easy to make and is an exceptionally refreshing cocktail perfect for a hot day. We know you will love sipping this Frozen Limoncello Gin Spritz Cocktail by the pool all summer long!
What’s in this Cocktail?
This cocktail is a twist on the classic cocktail, the Aperol Spritz, but with a few different ingredients giving it a light blush color and a refreshing flavor. The main ingredients in this cocktail are Gin, Bitter Bianco, Limoncello, Prosecco and simple syrup. The mint sprig is a great way to top off this cocktail with a delicate aroma.
Empress 1908 Gin
The star of the show is the Empress 1908 Gin, of course, and that’s what gives it a subtle rose color when mixed with the other ingredients. The Empress flavor is subtle but noticeable and really makes this cocktail shine. Bitter Bianco
We replaced the Aperol with a different bitter spirit, Luxardo Bitter Bianco, that has a clear color rather than the bright orange Aperol. We did this in order to preserve the beautiful color-changing properties of the butterfly pea flower-infused indigo color of Empress 1908 Gin, while keeping the slightly bitter notes that you find in the traditional spritz.
Limoncello
Next we added Limoncello, a lemon flavored Italian liqueur that is produced in the lemon-centric regions of Southern Italy, such as the Amalfi Coast. The Limoncello liqueur is another great pairing with Empress 1908 Gin and helps add some sweet but boozy citrus flavor to the final drink.
Limoncello has taken the US by storm this year and is super popular for making limoncello cocktails! We first discovered limoncello about 6 years ago during a trip to the south of Italy along the coast of Amalfi, and we have been obsessed with it ever since!
Prosecco
The Prosecco gives this spritz a light consistency and airy texture. Prosecco is an Italian DOC or DOCG sparkling white wine. It is produced in several regions across Italy and is used in various Prosecco cocktail recipes including the Aperol Spritz.
Simple Syrup
In this recipe we use a rich simple syrup that is 2 parts sugar to 1 part water. We prefer this richer simple syrup over the basic 1:1 ratio of sugar to water because it keeps for up to 6 months in the fridge. The basic 1:1 simple syrup keeps for less time.
If you are using a 1:1 simple syrup, you may want to double the amount of simple syrup in this cocktail to make it a bit sweeter.
How to Make Simple Syrup
The 2:1 rich simple syrup in this recipe is very easy to make at home. To make simple syrup, combine 2 parts sugar and 1 part water in a small saucepan over medium heat and simmer for about 10 minutes until all the sugar has dissolved. Remove from the heat and cool before transferring to an airtight container or using in this cocktail.

Frozen Limoncello Gin Spritz Cocktail
Equipment
- 1 Blender
Ingredients
- 1.5 oz Empress 1908 Gin
- ½ oz Limoncello
- ½ oz Luxardo Bitter Bianco
- 2 teaspoon rich (2:1) simple syrup (see note)
- 4 oz Prosecco
- 1 ¼ cups ice
- Fresh mint sprig for garnish
Instructions
- Add all the ingredients to a blender. Blend thoroughly, pour into a chilled stemless wine glass (or other chilled glasses) and serve immediately with a sprig of mint.
