    Mango Coconut Mint Daiquiri

    This Mango Coconut Mint Daiquiri a great frozen drink to welcome the warmer weather of spring and summer. The mango flavor with just a touch of coconut and mint in a frozen drink format is so refreshing, and we love sipping this by the pool!

    Frozen Concoction

    Since mango has an unusual texture, the drink will tend to be ice cold without being icy (more like a smoothie texture than a margarita). So we recommend that you start with about 3 cups of ice and see if that is the texture you want for the final drink. You can always add more!

    For an extra bit of visual pleasure, the grenadine provides a nice swirl of color in the glass. But it's not just for looks! The grenadine also adds a completely different sweetness in the drink than just using a simple syrup or other sweetener. It is usually made from pomegranate juice and is nonalcoholic, making it great to use for mocktails as well.

    This recipe makes enough for about 2 hurricane style glasses (about 15.5 oz each).

    Ingredients
      

    • 5 oz White Rum
    • 2 oz coconut liqueur
    • 8 mint leaves
    • 2 tablespoon simple syrup
    • 2 teaspoon lime juice
    • 7 oz fresh mango, skin removed, rough diced (265g or 1 large mango)
    • 3 to 3 ½ cups ice
    • 2 tablespoon grenadine (1 tablespoon per glass)

    • Add all ingredients except the grenadine to a blender. Blend until smooth. Put 1 tablespoon of grenadine into the bottom of each chilled hurricane glass. Pour the blended mango drink over the grenadine and garnish with a mint leaf.
