    We are still living it up over here with everything fresh, fruity and full of Summer vibes! This Watermelon Dreams Cocktail is a refreshing combo of watermelon mint simple syrup, vodka, Prosecco, vanilla, and cranberry bitters for the perfect summer sip!

    Watermelon Mint Simple Syrup

    The watermelon mint simple syrup is easy to make at home in the height of watermelon season. It is made using pureed watermelon (from fresh using a blender), mint leaves and sugar, simmered and strained. Straining out the watermelon solids results in a beautiful golden syrup that won't make your cocktail cloudy! The essence of watermelon and a hint of mint remains. This is the perfect syrup to use in a variety of cocktails, or added to Prosecco or champagne for a refreshing summer mimosa!

    You can store the simple syrup in the fridge in an airtight container for up to a month.

    What do I need for this cocktail?

    To make the Watermelon Dreams Cocktail, all you need is a shaker with ice and a strainer. This drink can be served in any lowball glass over a large ice cube. Alternatively, you can serve it straight up in a martini or champagne glass if desired.

    Other ingredients needed for this cocktail are fresh mint leaves, cranberry bitters, and vanilla extract.

    We used vodka in this cocktail, but it is also great with gin if you are more of a gin drinker.

    This Watermelon Dreams Cocktail is a vodka, watermelon mint simple syrup, Prosecco drink with a little surprise for the perfect summer sip!

    Ingredients
      

    Watermelon Mint Simple Syrup (makes 1.5 cups)

    • 5 cups watermelon puree (use a blender to puree watermelon)
    • 1 cup sugar
    • 15 mint leaves
    • ½ teaspoon salt

    Watermelon Dreams Cocktail

    • 2 oz Vodka
    • 1 oz Watermelon Mint Simple Syrup
    • 4 dashes Cranberry Bitters
    • ¼ teaspoon Vanilla Extract
    • 1 Mint Leaf
    • 2 oz Prosecco

    Instructions
     

    Watermelon Mint Simple Syrup

    • Combine watermelon puree, sugar, mint leaves and salt in a sauce pan over medium heat. Simmer for 10-15 minutes or until the sugar has dissolved completely.
    • Strain out watermelon solids through a fine sieve lined with a cheese cloth to ensure that all solids are removed.
    • Set aside to cool before adding to your cocktail. Store in the fridge in an airtight container for up to 1 month.

    Watermelon Dreams Cocktail

    • Add the vodka, simple syrup, bitters, vanilla and mint leaf to a shaker with ice. Shake for 30 seconds or until the outside of the shaker feels cold.
    • Strain half the contents into a glass with a large ice cube (or straight up if desired). Add 1 oz of Prosecco, then add the remaining contents and top off with Prosecco. Garnish with a mint leaf and enjoy!
