    Raspberry Lychee Gin Spritz

    In this beautiful refreshing cocktail, the flavors of raspberry and lychee blend so nicely with the Empress 1908 Gin without too much sweetness. A topping of Prosecco (or other sparkling wine of your choice) makes this Raspberry Lychee Gin Spritz even more pleasant.

    The Flavor Combo

    Lychee and raspberry are quite the dynamic duo. They pair wonderfully without being overpowering. Their subtle sweetness and individual flavors harmonize with the botanicals in Empress 1908 Gin, while providing a stunning color and simple beauty. The Chambord adds a little more depth of flavor to this spritz and ties everything together. But the star of the show is the gin, of course!

    Homemade Simple Syrup

    For the simple syrup, we prefer a 2:1 ratio of sugar to water. You can make your own at home by combining two cups of sugar with 1 cup of water over medium heat and simmer for about 10 minutes until all the sugar has dissolved. Then remove from the heat and cool before transferring to an air tight container or using in a cocktail. You can store the simple syrup in the fridge for up to 6 months.

    Top Tip for Creating this Raspberry Lychee Gin Spritz

    A great tip for this drink is to pick up a bunch of lychees and raspberries and make the juice and puree ahead of time. You can combine the finished juice and puree for storage if you want since they are used in equal proportions.

    This is also a good drink to make ahead without ice and just pour the mix into your shaker when you want to make a spritz, then add the Prosecco at the end!

    Ingredients
      

    • 1.5 oz Empress 1908 Gin
    • ½ oz Chambord (or Raspberry liqueur)
    • ¼ oz raspberry puree
    • ¼ oz lychee juice
    • 1 teaspoon simple syrup (2:1 sugar to water)
    • 2 oz Prosecco

    • Begin by preparing your puree and juice. Peel and de-seed your lychees (about 1 dozen lychee) and process in a blender. Remove the pulp to a fine mesh strainer or cheesecloth and extract as much juice as possible. Set aside. For the raspberry puree, simply blend the raspberries (approx 1 pint) until smooth, then pass through a fine mesh strainer to make sure there are no seeds in the puree (you will get enough juice for about 4 cocktails - store the juice in the fridge in an airtight container for up to 1 week).
    • In a shaker, combine the Empress 1908 Gin, Chambord, raspberry puree, lychee juice, and simple syrup with ice. Shake vigorously for 20 seconds. Pour the mixed cocktail into a tall glass filled three-quarters with crushed ice. Top the drink with Prosecco and serve.
