    Ingredients
      

    For the simple syrup:

    • 1 very ripe pear
    • 1 ¼ cup sugar
    • 1 cup  water

    For the cocktail:

    • 3.5 oz  gin of choice
    • 1 oz  pear simple syrup
    • 1 oz  club soda
    • 1-2 whole sage leaves
    • 5-8 whole pink peppercorns
    • 1 whole sage leaf for garnish

    Instructions
     

    PEAR SIMPLE SYRUP:

    • Chop pear into small pieces.
    • Place all ingredients in a saucepan and stir to combine. Bring to a boil, then reduce heat to low and simmer for 15-20 min. At this point the liquid should resemble a light syrup.
    • Remove from heat and let cool for 5-10 min
    • Use an immersion blender to puree ingredients (or a normal blender).
    • Strain using a fine sieve into an air tight container. Keep in fridge for up to 3 weeks.

    THE MARTINI:

    • Combine all ingredients except the club soda in a shaker with ice.
    • Shake and strain into a martini glass.
    • Add the club soda.
    • Garnish with a sage leaf.

      Do you muddle the peppercorns and sage leaves?

        No, we like these flavors to be on the subtle side, so we don’t muddle them and simply shake them with the other ingredients. But if you prefer that the Sage and peppercorn flavors are more assertive, you can muddle them. Enjoy!
